THE PORRIDGE WITCH

Hello, my name is Susi and I am The Porridge Witch. Why? Because I love the alchemy of the humble nutritious oat and how it has been used in kitchens and literature for centuries, long before Charles Dickens used the gruel in Oliver Twist and Thomas Hardy the fermity of disastrous consequences in Thomas Hardy’s The Mayor of Casterbridge to the modern day sachets and tubs for busy people “on the go”.

A cheap food, it has raised the eyes of hungry school children, longing for waffles or Coco Pops –“Not porridge, again, Mum!” (Or was that just my daughter?) For many it is seen as a super food, rich in fibre and nutrients together with its low glycaemic index it is alleged by many that its slower passage through the gut keeps you going till lunchtime without getting hungry. I have to say that has not been my experience, but of course that might just be what I put with it rather than the oats themselves. It has also been found to help in lowering cholesterol, so oats are certainly the dieticians’ friend.

However, whilst we will look at the traditional porridge, this site is all about creativity. Porridge as you have never experienced it. We’ll be taking porridge to the next level.

I have to thank my friend Rosie for spurring me on to share my recipes and try them out at local farmers markets. So beware!! The Porridge Witch is coming to a farmers market near you. But just Teesdale for starters!
